White pepper — not separate type of pepper, but Piper nigrum (black pepper) in a special way processed. It represents almost mature, cleared of cover fruits (more precisely, already seeds) cream-white color with more fine and strong aroma, than at black pepper.
The white pepper is appreciated more expensively than black and used in meat and fish dishes, and also in light sauces or dishes where from the esthetic point of view dark impregnations of black pepper are undesirable.
Pepper stimulates appetite and promotes digestion.
Pepper is used for soups, sauces, sauces, vegetable salads, marinades, at preparation of all types of meat, including game, Savoy cabbage, haricot, peas, lentil, sauerkraut, goulash, eggs, cheeses, tomatoes, fish, tinned vegetables and for large number of other dishes which prepare in our kitchen. Production of sausages and a number of made-up meat products does not do without pepper.
Pepper — the most universal spice to many dishes. Black pepper is used in any dishes - even in desserts (the ancient recipe of the Russian gingerbreads, the Indian, Baltic cookies) and sweet drinks (sbiten, tea, coffee, various cocktails).
It goes on sale in the form of peas or ground. Ground peas of pepper possess the greatest aroma. In ground look black pepper is used for gas station of different dishes, forcemeats, stuffings. Pepper is added to dishes shortly before readiness, otherwise, at long cooking, the dish gets excessive bitterness.
Hot soups will not have saturated spiciness if in them at the beginning of preparation not to put several peas of black pepper. Cold soups most often season with ground black pepper.
